For hundreds of years, the kitchen garden has provided much of the food used at Thornbury Castle, and thanks to the combined skills of Head Gardener Kate Engler and her team, the vegetables, edible flowers and seasonal fruit used by our chefs are just about as fresh and flavoursome as you can get. Kate works closely with our talented chefs in maximising the growth of seasonal produce with the vision of moving the castle towards a fully substantial kitchen garden producing seasonal fruit and vegetables, while adding a modern twist here and there.
Our team of talented chefs is headed up by Executive Chef, Carl Cleghorn, who has returned to the South West where he worked for many years. His previous roles include Head Chef at a 5-star resort in South Wales, Senior Sous chef at the Michelin starred 3 rosette restaurant at The Queensberry hotel in Bath, as well as working alongside Executive chef Richard Davies at The Manor House in Castle Combe, a 5 red star country house hotel which held a Michelin star and 3 rosettes. He prides himself on using the best seasonal and local ingredients, as well as the relationship he has built with the local suppliers showcasing the best of British, to create a memorable dining experience for our guests.
