About Thomas by Tom Simmons
Inspired by Tom’s rural Welsh heritage, the menu at Thomas is always reflective of the seasons and of the best produce that Wales has to offer.
Born and bred in Wales, Tom’s respect and passion for nature, produce and cooking has been a major part of his life from a young age. His earliest memories are of roaming farmers’ markets in Pembrokeshire, foraging in the West Wales countryside, and harvesting his mother’s vegetable garden. This love and respect for homegrown Welsh ingredients is the foundation of Tom’s cooking and his inspiration behind Thomas, Pontcanna.
Joined by partner Lois, Tom has been at the helm of his successful flagship restaurant Tom Simmons Tower Bridge since 2017. After three years of bringing the very best in Welsh produce to London, the pair are coming home to open their first restaurant in Wales.
We ate at Thomas last night for the first time. We’ve wanted to for a long time and had heard nothing but good things. It DID NOT DISAPPOINT. Expect incredible food at high end prices. But believe me, the price is worth the experience. The lamb may be the best I’ve ever tasted, and creativity of side pairings is just genius. We’ll be back.

Went here for my fiancée’s birthday. Truly amazing quality food and service. Certainly would recommend and will definitely visit again in future. COVID protocols were all in place and well adhered to for anyone concerned with that perspective. We had the pig skin with hummus and fried chicken to start. The chicken was to die for and the pig skin was so light it didn’t have the heaviness of pork scratching, more light like a prawn cracker but not greasy at all. For main we had the lamb cannon and pork loin which were both faultless, with sides of bbq’d cabbage (incredible even though it doesn’t sound special), curry chips (we opted without cheese) - I don’t know how these are made but wow, they’re like latticed perfectly crispy and subtly curried chips. We also had the skinny fries with truffle dip and again amazing. For dessert we had the chocolate mousse with banana ice cream. My description doesn’t do the menu description justice, but again light, delicious and faultless! 10/10 extremely impressed and lived up to expectations.

Our first visit and we will be back. Very comfortable place to be in terms of decor, furniture, lighting etc. We went for lunch and was a pleasant and relaxed atmosphere. Food was great - recommend the cured salmon, fillet steak, and the chocolate mousse - but to be honest, everything we had was impressively tasty and beautifully presented. Wine list good too. Not cheap, but worth it, especially if this is what’s needed to help good neighbourhood restaurants like this thrive.
Absolutely loved our first visit from entering the cosy refurbishment and being greeted by Andrew, the excellent service from Carolina and team and of course the amazing food, best fish and chips ever and as for the pate.....wow. We have rebooked for Sunday lunch. Well done Tom and Team

We loved our meal at the restaurant and the staff were amazing. The food really does speak for itself and when we come to visit we are going to make sure a visit to Thomas by Tom Simmons is on the list!! Especially for the Sunday lunch. Thanks for making it such a special occasion and making leave Cardiff even harder.
Beef Wellington was tender and tasty. Ambiance, decor and service all delightful. Desert was a little bland but this is a minor grumble.
Wellie Wednesday was Wonderful! Beautiful mushroom croquettes to start, followed by perfect Beef Wellington. Lovely, safe atmosphere and professional, yet friendly, service from a great team. We will see you again soon
