We created Rubedo to share our passion for natural wines and comfort food. We want to promote the hard work and the talent of a bunch of people who treat nature and its products with the utmost respect. We try to go more than organic with the food we prepare and the wines we pour.
The style of our cooking is European bistro food and the menu is dictated by season, freshness and quality. We try to go as far as we can in sourcing unadulterated naturally grown ingredients.
We are pretty proud of the Italian culinary heritage of many of us, and have sampled many old family recipes throughout the years: these will appear on the menu every now and then.
Our wines and their grapes have never seen any mechanical nor chemical treatment, be it in the vineyard or in the cellar. They are the direct expression of the soil, the vine, the climate, the tradition and the hard work and talent of the winemaker. As a result, these “handmade” wines often come with no added sulphites: they will surprise, intrigue and often exhilarate you with their energy.

Brilliant staff, delightful food, just very noisy. This may have been partly due to the other guests at the time we were there, but it is a small space, made up of entirely hard surfaces, and you may like to look into something to deaden the acoustics a little
We made a reservation for two people at Rubedo for a Friday evening and we had 3 courses including a glass of white wine and a bottle of red wine. The starters were unique and delicious, accordingly excellent. The main courses (fish / meat) were simpler, but good. The meat was quite salty (served with a potato tart with cheese on top, so it was even more salty..) My partner's cod loin was very good but served too cold. The wine experience at Rubedo was indeed special. The glass of white wine was great and really a surprise. The first red wine we had chosen wasn't our taste at all. But the staff was very helpful and offered a different one which was a great match with the food. Dessert was very good. The service was friendly, but a bit rough and uncoordinated. The advise for the wine was detailed and good. We enjoyed the calm atmosphere on a Friday evening (which is rare in the busy church street) and we like Rubedo's approach of naturally grown ingredients with simple but tasty food. When it comes to wine selection, you have to be open and prepared for new tastes instead of comparing it to well-known and established wineries. We will definitely visit Rubedo again to try more food and wine!
We had an amazing lunch at Rubedo: fresh seasonal produce prepared in a simple but perfect manner. Rubedo is all about the ingredients (and the wine) and is a hidden gem of Stokey that is definitely worth knowing! We'll be back soon

Couldn't recommend this restaurant any more. Every plate was absolutely delicious, and they have a great and diverse wine list to boot. Already planning to return asap!
I loved everything about this place. So simple, understated yet it spoke volumes in terms of taste and quality. Thank you -- it was a wonderful way to spend my anniversary with my partner.
