This is the place for adventurous yet classical cooking among velvet and mahogany Victorian surrounds with relative newcomer, Ben Wilkinson (Holbeck Ghyll, Midsummer House) at the helm. Unleashed from the same old Lakes menu, sample the likes of scallops with fried chicken wings, or locally smoked salmon with pickled cucumbers to start. A wintery nut-crusted wild turbot with a red wine sauce and Cartmel Valley Venison with black olive, fennel and orange or sea bass, with pickled celery and braised lettuce showcase the kitchen’s broad influences. A light touch brings Snickers (iced peanut parfait, salted caramel, chocolate grenache) and jelly and ice cream (strawberries, milk ice cream, tea jelly and sable crumb) to gourmet life. Wines are expertly chosen with a focus on the Old World - and cheese is a treat. Tuck into a Cumbrian spread that could include Eden Valley organic brie, Allderdale goats cheese or cloth-matured Cumberland Farmhouse, with many sourced from Thornby Moor Dairy in Thursby.
