The 17th century hall of this popular hotel and restaurant has been refurbished by India Mahdavi, the talent behind Claridges recent overhaul while head chef Dan Smith has worked with Tom Aikens in London – and owner, Lord Edward Manners’ investment in good staffing is reflected on the plate. Classic French techniques (fricasse, jus, veloute) are warmed with zest from the likes of coconut, cocoa, rum and lime over a subtly ambitious menu. Starters could include marinated duck liver with shitake mushrooms and Gressingham duck ham, or goat’s curd mousse with contrasting elements (granola, apple, truffle, goat’s cheese ice cream). Mains include takes on Derbyshire pork and beef, as well as a host of English fish including hake with parsley and pearl barley risotto, braised chicken wings and poached cockles, and Filey Bay sea trout with carrot, yoghurt and nasturtium. Tuck into trendy homemade doughnuts with strawberry parfait and egg custard for dessert. Wine pairings are available.
