Anglo-French fusion in Manchester city centre

Underground restaurants are made for long, lost evenings, and Michael Caines restaurant at the Victorian boutique hotel Abode is no exception. A co-production by Gidleigh Park’s Michelin star chef Michael Caines and head chef, Robert Cox, the menu warms modern French techniques with Asian flavours. Start with yellowfin sashimi, and soy jelly or honey roast Goosnargh duck with an apple and ginger purée. Elsewhere mousses are crafted from Mrs Bells blue cheese (served with lively roasted chicory granite) or carefully sourced milk chocolate with each dish as complex and competent as the next. It is pricey (£16 for a starter is a guide) so the tasting menu makes sense. Wines are a draw, in particular Michael Caines own Blanc de Blancs Champagne which is also available in half bottles while mahogany and chrome tones paint a rather special picture.
