Tuck into some of finest fare in town at this palatial fifth floor restaurant. Clientele lean towards flashy, particularly on race days but that doesn’t detract from the stand out cooking, even if the crystal and leather fittings score high on the bling scale. Menus include a la carte, tasting and vegetarian. Cooking under the direction of Gidleigh Park’s two Michelin star chef, Michael Caines, Thomas Hine (Bath Priory, Gidleigh Park, Rick Stein) has a partially free rein, devising starters like a quail and duck liver salad with a mange tout and truffle salad or slow-cooked salmon with wasabi yoghurt and a deep fried oyster while mains could include roast fleetwood cod, lemon purée, crab, samphire and chorizo foam or Dorset rose veal with a herb puree. Warming citric and Asian flavours are a theme. Finish with regional cheese, poached white peach and pistachio frangipane or a chocolate and orange mousse with confit orange sorbet. Drinking options include a Champagne and cocktail bar and temperature-controlled wine room with 150 plus bottles.
