About Metamorfosi Roma
Roy Salomon Caceres nasce a Bogotà (Colombia) il 29 aprile 1977 ed è padre di tre bellissimi bambini.
Sul lago di Misurina inizia il suo percorso in cucina partendo dal gradino più basso, qui conosce Rinaldo Zolli che accende in lui la voglia di scoprire il meraviglioso mestiere del cuoco. Quella stessa voglia di crescere che lo porta in giro per l´Italia lavorando in località note come Forte dei Marmi, Cortina d´Ampezzo, Bormio, Arcidosso.
Nel 2001 arriva a porto ercole al Relais & Chateaux "il Pellicano" dove conosce il lavoro di gruppo di una grande brigata.
Nel 2002 alla Locanda Solarola lavora sviluppando le basi gustative l´approfondimento della materia prima di qualità. Si inserisce nel ottica della alta ristorazione, della cura del dettaglio e delle sfumature. Questa collaborazione durata quasi sette anni, dove gli ultimi due anni dirige la cucina conservando una stella della guida Michelin.
Nel 2010 inizia un grande cambiamento con il trasferimento ad Albano Laziale e la collaborazione al ristorante Pipero con ottimi risultati sul pubblico capitolino e non solo.
Found the six course menu at good value for money, due to the quality of ingredients such as wagyu and blue fin tuna (at least it seemed it). Some very nice dishes, my personal favourite was the fake tomato: never had anything with a texture like it and the taste was exceptional. The wagyu, tuna and egg courses were also special, and the pre-dessert was exceptional. The only little letdown was the hazelnut-mushroom risotto. The presentation was very pleasing, but it lacked a bit of grit and strangeness in the taste. To summarise, it was lighter and neutral than expected. Still not a bad dish overall, but less memorable than the others.
It’s a very nice and refined Italian dining. The food was great and most of them were perfectly redone beyond my imagination. A great vault of wine and an excellent recommendation from the waiting team. The decor is contemporary with a touch of Japanese at the door. Just the temperature was a bit too warm for me. Servicing staffs were excellent! Overall we enjoyed the meal and were impressed by the cuisine! Thanks chef!

We had a fabulous dinner at Metamorfosi - all aspects of the meal from booking to service to the food itself was wonderful! The Egg Carbonara was worth the experience alone! Highly recommend for anyone traveling to Rome.
Menù degustazione da 6 portate per assaporare l'idea di cucina dello chef Caceres. Servizio impeccabile e sempre attento, location molto minimale ma calda e accogliente, insomma da ritornare per degustare tutti i piatti del menù.
Cibo buono ma non eccezionale. Il servizio lascia a desiderare, piatti spiegati in modo frettoloso e attese lunghissime per riceverli al tavolo. Prezzi troppo alto rispetto a ristoranti di pari livello da me testati. Non ci tornerei

Complimenti allo chef. Ho scelto la degustazione 6 portate e tutto è' stato ottimo! L'equilibrio degli ingredienti mi ha fatto apprezzare sapori particolari. Originali gli impiattamenti. Però c'è una nota negativa che riguarda il servizio: cameriere poco attento . Ci ha servito un delizioso antipasto con dadini di tonno all'interno di una foglia che, per richiesta dello chef, va mangiata con le mani a cui deve necessariamente seguire una salvietta umida per pulire le mani. Salvietta non pervenuta. Acqua e vino versati nei bicchieri con poca attenzione facilitando la fuoriuscita di schizzi .Pane servito solo all'inizio e mai più proposto. Riguardo ambiente: Troppa differenza tra la parte al piano terra con delle luci soffuse e calde rispetto al piano superiore freddo e poco accogliente. Ci tornerò sicuramente perché il cibo e' ottimo e spero che il servizio da me riscontrato non sia la norma. In un ristorante di livello ci si aspetta di più .
The bad feedback for the atmosphere results from the fact that the Management allows people to dine with T-Shirts, thongs and shorts. The Atmosohere remembere more to a McDonalds than a Michelin Star rated gourmet temple.
We had been to Metamorfosi several times in 2014-2015 while we lived in Rome. We always came back because the food was delicious but also te restaurant was intimate and the service excellent. We came back expecting the same, and were really negatively surprised with the ambience, service and execution of our favorite dishes. The staff were really inattentive (we were not even asked if we wanted wine), had to wait really really long between dishes, didn’t even get the pre-dessert because the waiter forgot, had to also wait a long time to get the bill (which was incorrect as we had been charged for things we hadn’t had) and when we provided feedback to the staff, they didn’t apologize or acknowledge that their restaurant has changed substantially. They have lost two customers and we will definitely not recommend it to anybody.
We had heard good things about the restaurant and was looking forward to our visit. Food was in general ok but the service we experienced made this the worst fine dining experience we ever had. Half way through the meal the staff stopped supporting the upper part of the restaurant where we were seated. Food was thrown at the table without presentation (example was lobster with sauce). We also ended up sitting the last two hours with empty glasses and no one coming to ask if we would of like something else, not even filling up our empty glasses of water. Think that a meal priced at 550 for two persons should be a positive experience with attending service as we normally get at resaturants of this standard, but hope that this was only a one time blunder from the staff. Esperienza culinaria di alto livello che non tradisce le aspettative.
E' stata una bellissima serata, la cucina è eccezionale e lo staff è stato davvero molto gentile. Abbiamo festeggiato il compleanno del mio compagno e abbiamo ricevuto attenzioni molto gradite dallo staff che si è dimostrato gentile, simpatico ed educato. 10 e lode la cucina, peccato solo di non aver conosciuto lo chef. Consigliatissimo.
Portion topricing is a bit unbalanced. Wine pairing was great, but don't be so stingy with it. This is Italy and wine should not be etered.
A big surprise directly in our top three star restaurants we had the chance to do.
The staff would not disclose what would be on the 10 course menu. I requested that both me and my husband do not eat gamey food. The waiter assured us that nothing too gamey would appear on the secret menu. We received 3 gamey dishes: chicken liver, lamb tartar in lukewarm temperature, and lamb shoulder. We became sick and nauseous from just taking on bite of these dishes and the staff did not seem to notice at all. We were anxious for the meal to finish and to go home, but it took close to 3.5 hours to actually finish this meal. We tried to be as polite in rushing the dishes but we just got very upset towards the end and asked for the check before the desserts even came out.
The food was great but the dinner service took too long. We opted for the 10 course meal and it took 3 hrs 15 mins. There were instances where we found ourselves waiting for the food for quite a long time— this was tiring. Apart from that, we loved it and would still recommend Metamorfosi to friends and family.
Had an amazing meal for our last night in Italy. The service was excellent and the food was suberb. They were also very accommodating to our daughters vegetarian needs. Only downside is the location seems off the beaten path and the atmosphere was a little too quiet for my taste. But the food more than made up for it!
The experience was memorable the food was presented with thought, vision and creativity. Every dish we had was a culinary adventure! Our server and sommelier were impressive and met all of our needs. We had the pleasure of meeting Chef Caceres after our dinner, he was very passionate about the total dinning experience not only the food and humble as well. The service, staff, ambience, food, and wines were exemplary. We thoroughly enjoyed our entire eventing. Innovative dishes paired with an equally knowledgeable sommelier produced a most memorable evening for two restaurant and bar lobbyists from the US. The only issue we had throughout the entire evening had nothing to do with the service, food, or wine. A table with a small child was blaring an American television show over their electronic device and staff did not ask them to leave. At a restaurant of this caliber and price point, allowing small children inside coupled with allowing patrons to watch videos aloud is completely unacceptable . We made reservations at an exclusive Rome restaurant- not McDonalds.
Such a beautiful restaurant and lovely service. I was honestly terribly disappointed in the quality of the food itself: no single dish seemed to have truly balanced, vivid flavors of the kind I have had at restaurants of similar note and quality elsewhere (I eat fairly regularly at spots of this caliber and price point). I was disappointed and unfortunately would not be able to recommend Metamorfosi to friends; though, again, I found the service and atmosphere very nice.
