About Metamorfosi Roma
Roy Salomon Caceres nasce a Bogotà (Colombia) il 29 aprile 1977 ed è padre di tre bellissimi bambini.
Sul lago di Misurina inizia il suo percorso in cucina partendo dal gradino più basso, qui conosce Rinaldo Zolli che accende in lui la voglia di scoprire il meraviglioso mestiere del cuoco. Quella stessa voglia di crescere che lo porta in giro per l´Italia lavorando in località note come Forte dei Marmi, Cortina d´Ampezzo, Bormio, Arcidosso.
Nel 2001 arriva a porto ercole al Relais & Chateaux "il Pellicano" dove conosce il lavoro di gruppo di una grande brigata.
Nel 2002 alla Locanda Solarola lavora sviluppando le basi gustative l´approfondimento della materia prima di qualità. Si inserisce nel ottica della alta ristorazione, della cura del dettaglio e delle sfumature. Questa collaborazione durata quasi sette anni, dove gli ultimi due anni dirige la cucina conservando una stella della guida Michelin.
Nel 2010 inizia un grande cambiamento con il trasferimento ad Albano Laziale e la collaborazione al ristorante Pipero con ottimi risultati sul pubblico capitolino e non solo.
The experience was memorable the food was presented with thought, vision and creativity. Every dish we had was a culinary adventure! Our server and sommelier were impressive and met all of our needs. We had the pleasure of meeting Chef Caceres after our dinner, he was very passionate about the total dinning experience not only the food and humble as well. The service, staff, ambience, food, and wines were exemplary. We thoroughly enjoyed our entire eventing. Innovative dishes paired with an equally knowledgeable sommelier produced a most memorable evening for two restaurant and bar lobbyists from the US. The only issue we had throughout the entire evening had nothing to do with the service, food, or wine. A table with a small child was blaring an American television show over their electronic device and staff did not ask them to leave. At a restaurant of this caliber and price point, allowing small children inside coupled with allowing patrons to watch videos aloud is completely unacceptable . We made reservations at an exclusive Rome restaurant- not McDonalds.
Such a beautiful restaurant and lovely service. I was honestly terribly disappointed in the quality of the food itself: no single dish seemed to have truly balanced, vivid flavors of the kind I have had at restaurants of similar note and quality elsewhere (I eat fairly regularly at spots of this caliber and price point). I was disappointed and unfortunately would not be able to recommend Metamorfosi to friends; though, again, I found the service and atmosphere very nice.
Fantastic meal and excellent wine pairing
Had the 10 plate tasting menu. Overall, food was very good and the service excellent. Manzo and eggplant plate was the only plate in which ingredients did not go well together. The mushroom based plate was not too great either. On the other hand, the carbonara egg 65, the duck liver, ravioli and balck forest were exquisite. The wine selection was also really good. The rum in the end was rather on the expensive side at 25 per glass. I would recommend this place without a doubt.

The dinner that my husband and I had at Metamorfosi Roma was one of the best meals he and I have ever had. Every dish was imaginative, beautifully presented, and truly delicious. We were truly blown away! In addition, the service was wonderful -- welcoming and friendly. We highly recommend Metamorfosi! It was by far the best restaurant at which we ate in Rome.
Tout était parfait sauf la climatisation un peu basse et l'enchaînement des plats un peu rapide. Nous recommandons vivement le restaurant !!!

We had the excellent six course dinner and were sad when the dish was removed (after eating it all) for each and every one of them. The waiters were very friendly and attentive the wine was great and the setting was relaxing.
AMASING - It is a very unique experience on food which realy is ready for a 2. Michelin Star! My personal favaorite is the mushroom risotto. The wine menu is a class of its own - wounderful selection of Italian wines and great recommondations by the Sommelier.
Please avoid. Had a terrible experience that is not akin to any other Michelin starred restaurants I have been to (I have been to several across Europe). The food of all dishes were cold, the service was unprofessional with arguments between waiters and the restaurant smelled of sweat. The food was average, but not worth the price tag and strangely peculiar. It felt outdated and lacked any speciality. The only dish worth it was the carbonara egg and the wines. I was severely disappointed and wish I hadn’t asked my family to join me there. At the end of the service they also gave us the wrong bill trying to overcharge us after we waited about 15 min for the bill. Avoid at all costs.

Una cena strepitosa! innovativa e veramente buonissima! Sopratutto, il servizio era fantastico - sempre li ma non troppo, e molto divertente. E' stato una serata stupenda. Non vediamo l'ora di tornare... Vi ringraziamo tantissimo.
È stata un’esperienza straordinaria. Dal servizio formale ma senza mettermi a disagio al cibo... FAVOLOSO, un’esplosione di sapori... veramente un’esperienza unica e tornerò di certo!
We visited recently and had an amazing time-the food was sublime (risotto with pistachio was a revelation) and the service impeccable. An all round excellent experience.
