About Metamorfosi Roma
Roy Salomon Caceres nasce a Bogotà (Colombia) il 29 aprile 1977 ed è padre di tre bellissimi bambini.
Sul lago di Misurina inizia il suo percorso in cucina partendo dal gradino più basso, qui conosce Rinaldo Zolli che accende in lui la voglia di scoprire il meraviglioso mestiere del cuoco. Quella stessa voglia di crescere che lo porta in giro per l´Italia lavorando in località note come Forte dei Marmi, Cortina d´Ampezzo, Bormio, Arcidosso.
Nel 2001 arriva a porto ercole al Relais & Chateaux "il Pellicano" dove conosce il lavoro di gruppo di una grande brigata.
Nel 2002 alla Locanda Solarola lavora sviluppando le basi gustative l´approfondimento della materia prima di qualità. Si inserisce nel ottica della alta ristorazione, della cura del dettaglio e delle sfumature. Questa collaborazione durata quasi sette anni, dove gli ultimi due anni dirige la cucina conservando una stella della guida Michelin.
Nel 2010 inizia un grande cambiamento con il trasferimento ad Albano Laziale e la collaborazione al ristorante Pipero con ottimi risultati sul pubblico capitolino e non solo.

Please see my Trip Advisor and Google review. Easily one of the most memorable meals we have ever had. On our trip to Rome this week we also had the opportunity to dine at La Pergola. This was by far the more outstanding of the two. Service is attentive but relaxed and with a great sense of humor. The decor was minimal but warm and inviting. The food was inventive, fresh and of the highest caliber and the sommelier was spot on with his wine pairings. If you are looking for a typically stuffy 3 Michelin star dining experience, La Pergola is for you. Metamorfosi combines the best of fine Italian food and the Italian personality with an equally inventive view of the future. Incredible food, absolutely whimsical
Wow! What can I say, this was not only the best meal I had in Rome but my best dining experience to date. I went with my girlfriend to this restaurant to celebrate her birthday during out trip to Rome. The service really stood out and the whole team were very knowledgable, attentive and accommodating. The Chef's passion and the restaurant's ethos shone through in every minute detail. Everything was very well thought out and complimenting of each other. Discovering Chef Caceres' culinary journey, it was very intelligently and harmoniously integrated into the menu and decor of the restaurant. Chef Caceres is talented beyond belief but what stood out was his passion, distinct style and great sense of humour. His Egg Carbonara, a playful deconstruction of the classic Roman dish was a gastronomical journey and a bold statement, as it did not include any pasta but every ingredient was easily identifiable but combined beautifully to resonate the classic flavours and pay homage to his roots. This is the magic of Chef Caceres, he has playfully re-created the dish with the same flavours, albeit without a principle ingredient but has elevated it with a lightness indulgence and theatre. This has resulted in a wonderful explosion of flavours, which dance festively around the tastebuds, leaving you wondering and yearning for the dish long after you have savoured it. This was one of many dishes that left an impression on me personally. I highly recommend it and next time I visit Rome, I intend to return more often. Enjoyed excellent dinner
Metamorfosi is a true culinary experience. There is originality, creativity, refinement, taste and friendliness. The venue and the chef deserve praise beyond the single Michelin star.
Amazing dinner we had, service and food was good and you felt the warmth and hospitality from the staff as soon you walked in the door.
service was impeccable and the originality and taste of the food really above any expectations. I live in London and eat at Michelin starred restaurants frequently but this was well above the 1 star you have so far. All the best of luck and the utmost respect for what you do!
sapori particolari, veramente interessanti, riso spaziale abbiamo scelto il menu a 6 portate a sorpresa, e purtroppo non ci è stato servito il famoso ceviche dovrò necessariamente ritornare!!! bravi

Piatti decisamente studiati e stupefacenti sia per presentazioni che per sapori. Decisamente interessante i connubio tra le origini colombiane dello chef e la cucina del territorio. Sala molto elegante e staff che ti sa mettere a tuo agio con un servizio professionale ma leggero senza farti provare l'imbarazzo o il peso di essere in un ristorante stellato. Esperienza positiva da ripetere.
