About Metamorfosi Roma
Roy Salomon Caceres nasce a Bogotà (Colombia) il 29 aprile 1977 ed è padre di tre bellissimi bambini.
Sul lago di Misurina inizia il suo percorso in cucina partendo dal gradino più basso, qui conosce Rinaldo Zolli che accende in lui la voglia di scoprire il meraviglioso mestiere del cuoco. Quella stessa voglia di crescere che lo porta in giro per l´Italia lavorando in località note come Forte dei Marmi, Cortina d´Ampezzo, Bormio, Arcidosso.
Nel 2001 arriva a porto ercole al Relais & Chateaux "il Pellicano" dove conosce il lavoro di gruppo di una grande brigata.
Nel 2002 alla Locanda Solarola lavora sviluppando le basi gustative l´approfondimento della materia prima di qualità. Si inserisce nel ottica della alta ristorazione, della cura del dettaglio e delle sfumature. Questa collaborazione durata quasi sette anni, dove gli ultimi due anni dirige la cucina conservando una stella della guida Michelin.
Nel 2010 inizia un grande cambiamento con il trasferimento ad Albano Laziale e la collaborazione al ristorante Pipero con ottimi risultati sul pubblico capitolino e non solo.

Inattentive service. 10 course dinner took 4 hours despite restaurant not being full. Asked for a glass of sparkling wine to start the dinner, not given any options, only to realise it is 25 euros per glass in the bill!
A menu that is carefully and creatively executed with service that is second-to-none. Classic French and Italian dishes are elevated with unique Asian and South American twists. Also boasts an extensive wine collection to match with the many flavors. Don't be intimidated; rather, trust the kitchen. My wife and I each chose the 10 course pre-fix with somm service and left the restaurant after 4 hours--truly a journey worth taking! Couldn't call it a value; but if one is going to splurge on a dinner in Rome, Metamorfosi is the restaurant in which to do it. Bravo!

The best service and food in Rome!
Me and my wife were in Rome for the weekend en made a reservation in this restaurant. We found it on some website, the reviews of other people where good and it was indeed really good. We took a tasting menu, had a lot of different things and they took care of my fish allergy :-) Also on the wine card there where a lot of different countries on it.
Service was 10/10 Loved the feel of the space. There was one fish noodle dish made by taking a fish stew and turning it into jelly, then cut into noodles. While this dish was interesting it was far below everything else in flavor had a strange texture. It was the only misstep of the meal. the waiter told me it take 48 hours to make and no offense but that is not time well spent. Otherwise I truly loved my meal and my time here.

Our 4th time in about 6 years and again a hit! 5 out of 6 courses were exceptionally good; ones that make you look at each other to mark the joint discovery of how creative and special it is. Service is as if you have a butler at home. Exceptional wines presented by knowledgeable people. It is also nice to be joined by a largely Roman crowd of diners. We will come again next time we are in Rome. We are fans.

Wine too expensive. However excellent experience
We had such a lovely dinner. Everything was perfect. It was my husband’s birthday and staff even gave us an extra dessert (cake with a candle for him blow out). The food and wine were delicious. Service was impeccable. Thank you again for making our dinner such a memorable, special experience.
The food is really good. We were surprised by the high quality of the dishes. The restaurant is strongly recommended in this respect. However, the negative point is the wine service. Although the wines served by the glass varied from good to very good, not a single one of them was served at the correct temperature: whites were slightly below room temperature (clearly too warm for adequate service) and reds at room temperature (way too warm). Knowing the problem is cronic in Rome´s restaurants we decided not to complain. If this serious mistake is redressed Metamorfosi would become a must for foodies in town.

We had the 10 course tasting menu plus the wine pairings. Food and wine were both amazing but we found it shocking when despite paying just under €600 they decide to charge €6 per glass of water. You would think water would be given especially when they filled our glasses without asking. We didn't even finish half the bottle and the water ended up costing €18. Funny to write it out. Service good. Atmosphere nothing special. Tried it wouldn't go again there are a lot more better options in Rome

Fantastic food, 10 corse surprise menu, and the wine pairing was excellent. The staff was great and sure knew how to offer great service. A bit expensive, but was worth it.
The wine pairing suggestions are quite daring at first sight but very very VERY pleasant in the end. Thanks a lot for such an experience.

Nice, delicate menu with a lot of different tastes and textures! The 10 dish menu was above everything and was cooked with big respect for the product! We didn’t took the adjusted wines but ordered 3 glasses with the sommelier and there where outstanding! The waiters where superfriendly, helped where they could and made sure the service was perfect! Tx for everything!
