About Margaux - Warwick Hotel, Seattle
Chris Zarkades is a Washington state native. Following his dream of becoming a Chef, he attended South Seattle Community College's nationally renowned and accredited culinary program. Chris graduated with honors in the spring of 1994 and immediately found a place in the kitchen of Warwick Seattle Hotel.
Chris worked on the line as a Sous Chef until he was promoted to the position of Executive Chef in 1998 and further honed his skills overseas at our sister resort in Fiji at The Naviti Resort.
In 2000, Chris returned to the helm of Margaux where he spent the next seven years preparing Northwest Cuisines with a French accent.
In 2007, Chris returned to the South Pacific where he took on the position of Head Executive Chef for the 5 star award winning Warwick Fiji Resort & Spa.
Now Chris returns home to the Emerald City where he can apply his passion for creating and preparing Northwest Cuisine at Margaux. His emphasis in Seattle is on our region's superlative seafood, locally farmed and foraged produce, and soul satisfying meat, game and poultry prepartions.
Chris is locally involved with Seattle's annual Bastille Day Festival, Festival of the Fountains, and FareStart's Guest Chef on the Waterfront.
His most recent project has been the redefinition of Margaux at Warwick Seattle Hotel. A restaurant with French overtones and a comfortably informal atmosphere, it offers a seasonal menu focusing on the best and freshest ingredients of the season.
