Firstly…a nod to the HQ of old, we know we've got big shoes to fill, and there's only one legend like Paul Smit! But this is our twist on an old Auckland 'fave', with a dash of Al Brown and a sprinkle of Francis Mallmann thrown in.
We really hope you like it, but just so we don't get in a tiff and risk the Midget losing it, let's agree that we’ve put a solid fuel hotline in for a reason; to burn the food! So if you don't like it that way, please don’t eat here or complain when you do…because (not over stating the fact) our entire hotline is solid fuel wood! We absolutely believe to our core that using hardwood to cook your food gives you the chance to test yourself, to push the boundaries, embrace the flame, the smoke, and the caramelization we love so much.
This is our epiphany, so welcome to the show. Sit up at the hotline if you wish, enjoy the honesty of HQ and the simplicity of what we do and how we do it.
We have taken the time to carefully select our partners and suppliers from throughout this wonderful country we live in.
When it comes to partners our selection criteria starts with trust, so we only do business with suppliers we know and trust. We want to know the provenance of all our produce… if it's not ethically produced and free range you won't find it here.
We don't do flavour enhancers, nothing artificial, we just cook in a pure and primal way, stripped back food at its finest. No silly pretentious descriptions, no stupid flowers, nothing fancy at all really. Just great honest tucker with lots of smoke, flame, and crusty bits…and of course using the best produce money can buy. Enjoy it for what it is.
The menu is by our Executive chef, Darren Lim, with a wee bit of input from the Midget, and a fair bit from Netflix.
