Fujisaki is the refined new modern Japanese restaurant and bar by Lotus Dining. Executive chef, Chui Lee Luk delivers her take on Japanese cuisine featuring a menu led by the seasons and emphasising the customised robata grill. Behind the raw bar, sushi master Ryuichi Yoshii uses some of Australia and NZs finest seafood to put on a show, cutting, blowtorching and shaping each mouthful of sushi and sashimi.
Fujisaki’s 300+ strong list is curated by sommelier Annette Lacey and the wines are housed in a fully humidified and temperature-controlled wine room. There;s also a large range of sake, whiskies and cocktails.
The 140-seater takes advantage of harbour views with indoor and outdoor seating and has three private dining spaces, including a tatami room, to cater for the local corporate crowd.
