Under the direction of Chef Mark Lawton, Eyas works hand-in-hand with local farmers, estate gamekeepers and nurseries to supply our kitchen with produce wherever possible that is grown, harvested and reared from within the 10,500 acre Castle Ashby Estate. The surrounding landscape shapes our menus.
Reintroducing seasonal, organic produce with pickling and fermentation, to create menus that comfort, nourish and redefine ‘feel good food’. Open for breakfast, lunch, afternoon tea, dinner and private events.
Tastefully refurbished to high standard. The "tasting menu" was ample in quantity and scope. The food quality was excellent. I would not be surprised to see awards rolling in. Service was good if a bit slow. Communication was a little hampered by mask wearing, so those waiters who are not native speakers might try to speak more slowly and clearly (like the French fellow). Perhaps try to ban the phrase "here you go" from the waitresses' professional vocabulary when serving dishes. Maybe leave the bread or offer more, given that the sauces were so good, they merit being mopped up in French Country style with bread. Leave the pitchers of water on the table as it it tiresome to keep having to call for a refill. Overall good value for money.

This is the second time we have visited for Breakfast. From the car park the entrance is not clear and the door was locked! On approaching the doorway all you see is a sign "staff only" and have to crane your neck to see the entrance sign high above the door. The service was terrible, we arrived at 8.15am and left at 11.15am. The waitress had 4 attempts to take our order. We were given the choice of yoghurts only to find they were not available when served. 3 of us had fruit and the other person ordered Crunchy nut cornflakes which did not arrive, we waited at least 10 minutes for the waitress to then come to the table to announce that our hot food was ready, I politely mentioned that one person had not had their cereals. When the first course was cleared away we ordered more drinks, we had to ask again if hey were on their way and they arrived about 30 minutes later. When our hot food arrived some of us were missing cutlery so this was duly polished and put on our table by which time the food is getting cold. There was no black pudding on the plates so the waitress went to get some and on return said "you are lucky, this is the last black pudding"! Although the food was good in the back of my mind I kept thinking that my breakfast had been kept hot for 20-30 minutes. It is not the fault of the waitress, she was working on her own, it is simply lack of training. Our first experience was a similar one. You have such a fantastic venue but my views are shared amongst friends who have had a similar experience. I have called to try and discuss our experience but am unable to get through or a callback. We are local people and this area is crying out for a great place like this so please get yourself sorted so we can enjoy. Many thanks
We had a relaxing and enjoyable Sunday lunch. The staff were attentive and the environment was warm and comfortable. The background music added to the contemporary vibe and we would recommend this as a great Sunday lunch venue
We had a beautiful stay in a fab room .The food and service was excellent throughout Dinner. Our breakfast the following morning was also outstanding. Thank you for a lovely stay. We will definitely be back.
The county has a dearth of decent eating establishments so this new restaurant is most welcome.

This has the makings of a real "destination". The staff were all extremely friendly and welcoming and it was very organised regarding the Covid-19 restrictions. The food was lovely and the whole place is very comfortable and extremely well appointed. My only negative comment would be the bar service, which was extremely slow.
Excellent new restaurant in beautifully revamped hotel. Even in these difficult times we were so well looked after and felt very safe. Oh yes the food was out of this world and the wine list very reasonably priced too. You even serve Laurent Perrier by the glass! Our new favourite in Northamptonshire! Thank you

All round a great experience and would definitely visit again. Not 5 for service however as felt we were 'forgotten' in the lounge area and waiting staff could have been more alert to glass refills and explaining the menu (very minor criticism I know, but hopefully helpful in improving the overall service experience so it matched the very high standards elsewhere)
Excellent main course Deserts very basic and not very nice. At 50£ for two courses needs to do better.
Was surprised menu didn’t offer variation on second night . Beautiful decor and atmosphere but probably need a bright lamp in the room for ladies doing their make up and our bath rail wasn’t a heated one for damp towels . Also with the Stay/Breakfast and Dinner package disappointing to find side dishes were extra and only two courses included for residents as over £700 for two nights is a fair price to pay . Maybe also paper mats under glasses when drinks served in bar as ice makes the glass quite wet underneath . Just a few observations for an otherwise lovely stay .

As one of a growing band of non-alcohol drinkers I would like to see a greater range of alcohol free beers available. On my visit there were only two lagers - a pale ale would be a good addition.
Top drawer, fantastic atmosphere, food and staff. Outstanding menu without being over fussy. A real pleasurable night out.
Lovely experience, the food was excellent and attentive service
A disastrous and disappointing experience for many reasons: 1) Our reservation time was changed when we arrived although I had the booking confirmed by email twice. We had to wait an hour over 40 mins for our table. 2) The Sunday lunch menu is in French, but no-one explained or translated the menu. I hadn’t realised I’d ordered a seafood platter, I’m allergic to sea food. 3) There was no draught ale, due to Covid! 4) Wine on the list was out of stock. 5) Main dishes arrived cold and had to be reheated. 6) White wine was left on the table with no cooler. 7) Red wine was taken away from the table. 8) Glasses were not cleared that we’d bought from the bar, once they were empty. 9) Our wine glasses sat empty and we had to ask for our red bottle of wine to be left at the table. 10) Our starters arrived separately, after waiting over an hour. 11) After dinner we retired to the lounge, but the staff didn’t offer to give us fresh glasses. 12) We were not allowed to sit at the bar due to Covid even though our chairs at the dinner table were touching the chairs at the adjacent table. 13) The tables in the lounge bar had not been cleared or cleaned immediately after previous guests had left. 14) There was a group of 10 people eaters dinners on their laps. 15) I asked for a bottle of Laurent Perrier Rose Champagne for myself and my husband, but was bought a wine glass half full with LPR. 16) The table was wet as no coasters were provided. 17) I had to ask for the bottle of LPR and 2 champagne glasses. 18) I also had to ask for coasters and a cloth for the bottle to stop it from dripping over me because we had to pour our own Champagne. (We were charged over £150 for) 19) When we asked what whiskies were on offer, the waiter didn’t know, but replied with a name of a brand he liked, so my husband had to get to the bar himself to choose. He asked for the water for his whiskey to be served separately to which the bar man replied it was too late as he had already poured the water in (drowned the whiskey). Absolute shambles. The hotel had been beautifully renovated, but the service is shocking! You’d get more attentive and knowledgeable service at a Wetherspoons! Such a shame. The afternoon was supposed to have been very special as we were married at The Falcon before it closed down. We were very excited with it being reopened. Unfortunately, we came away extremely disappointed, Hopefully lessons have been learnt as it was the first Sunday since reopening. It should have been perfect in every respect, but instead it was like something from Fawlty Towes, without the humour!
