The Eucalypt dining philosophy is to use the freshest ingredients with an emphasis on regional produce to create a modern yet comforting menu in intimate dining surrounds. An emphasis on texture and balance of flavours creates a true culinary experience for diners with Modern Australian cuisine paired with an extensive wine list.
Three course selection and six course degustation menus available.
Their Chef was able to custom design an incredible 3 course vegan menu with a number of choices. Can't wait to go back!

One of the meals - Lamb back-strap was very disappointing, chewy fatty meat and little flavour. One of the other meals was a tad bland. Had to wait too long a time between entree and main. Staff were good.
While the service was very good, the food was not. My entree stated it had truffle in it. Where?. My guest ordered the lamb main and it was tough to the point of being inedible. Everything was under seasoned. I was so looking forward to the meal and was left totally unsatisfied. The only redeeming factor was the cheese plate.
The waitress Stephanie was warm, professional and good at people skill. We ordered 3 courses dinner. The food was presented and also tasted great. Descent wine list with reasonable price. The sitting and setting felt intimate too. Will come back again.

Fabulous food and service, however it took over an hour for our first course to arrive! On paying our bill one round of drinks were taken off the bill. Staff were very apologetic and it was great to not be rushed but three hours was a little too much!
after taking my wife for our 15th anniversary to your Eucalypt restaurant and having to wait 2 hours for our 2nd entree to come out only to find it was wrong destroyed the mood of the night and the whole meal, with the main coming out at 9.30pm my wife was unable to eat it or dessert the whole thing was a disaster we expected better extremely disappointed would be an understatement
Food was perfect. Every individual thing on each plate was delicious. Service was great too.
The food was impossible to fault. Attention by staff was extremely good. The service we received from Lauren and Natasha during the two hours we dined at the Eucalypt restaurant was exceptional. Any requests (including taking some photos with my phone) were easily accommodated. It was a wonderful dining experience.
We had a fabulous meal at Eucalypt during our stay at the Fairmont Resort over the Easter break. The food was delicious, and my husband who usually feels the need to add pepper and salt to everything enjoyed his courses exactly as presented. Amelia and Stephanie looked after us very well, as did a senior team member whose name I didn't get. Our table was in the corner of the room, and although pleasant enough, we simply looked out into the dark evening - maybe in the summertime the views would have been better. In comparison to Darley's and other fine dining eateries it was only the ambience that was lacking at Eucalypt. We would definitely dine there again and would recommend it as a place to visit whilst in the Blue Mountains.
The service was first rate and chef was very accommodating for specific request. Which we really appreciated. The food was outstanding. A wonderful experience all round. I look forward to our next meal here.
As a couple, we have dined at all three top eateries in The Blue Mountains. If there were boxes to compare and tick, Eucalypt gets all the ticks. They are all unique but for us the stand out is Eucalypt. Thank you to all the staff for the absolutely fantastic attention and service. WE WILL BE BACK.....if not to stay, then only to dine.
Food and service was great
We had the degustation with paired wines. The entire meal and service was impeccable, wouldn’t change a thing. We stay at the Fairmont regularly but this was our first time dining at Eucalypt, and definitely won’t be the last!!
the staff here are the most pleasant I have ever dealt with, charming ,knowledgeable and beautifully presented. the food was divine, and we could not fault the night, I highly recommend the staff, thank you
The slow service let this restaurant down. Our booking was for 8pm and we were not served our starter until 8.50pm. Considering the were so few diners in the restaurant and no reason or apology was given, we were left to assume this was the normal. Additionally, the west's issues with the menu, with only a choice of degustation or 4 course meal. Having had bariatric surgery this was not really suitable for me. Finally, having gone with 4 courses, and needing to select 2 starters as non seafood eaters there was limited choice. The chef did accommodate to making 2 vegetarian starters an option (vegetarian main meal served as starter). The quality of the food served was very high.

The food was delicious however, I did not like only being able to choose between a 4 course meal or a 7 course degustation. I usually only eat 2 courses. The servings were indeed "fine dining" - very small!! That's how I managed to eat it! I think a little more value for money is in order - other fine dining restaurants do it.
