About Emilio's Tapas - Sol Y Nieve

Meet Chef Crispin

Chef Crispin, the youngest of 15 children grew up in the fertile farmlands of central Mexico. His mom was his early culinary inspiration. “She was a fantastic cook and we grew up eating homemade, flavorful, and healthy meals everyday. My mom prepared all the meals with farm fresh ingredients. I guess you could say I was a foodie from a very young age. The animals, fruit and vegetables were almost exclusively from our farm. Food was a huge part of our culture and our family,” Chef Crispin remembers.

Family was very important to Crispin. Three of his grandparents were of Spanish descent and he was 6 years old when his maternal grandfather passed away. Losing his grandfather at such a young age left him with a yearning to learn more about Spain and Spanish food. As a young man he immigrated to the United States and he was living in Chicago when an opening came up in a new Spanish restaurant. He rushed to apply for the job. The chef that hired him that day was Chef Emilio and they have been working successfully together for over 25 years now.

Crispin says that Chef Emilio’s belief in him is what really helped him to be successful as a professional chef. Chef Emilio’s talents constantly amazed him and Crispin continues to look up to him. With Chef Emilio mentoring him, Crispin was able to learn from the best, and with the Tapas King of Chicago’s encouragement Crispin was able to grow and become the award winning chef he is today.
