Head chef, Eddie Gray (LA’s SoHo House, the two-Michelin star Restaurant in Hyde Park) has taken the menu back to basics by fusing cool cuts like oxtail and sweetbreads with traditional techniques. The result is grand but not overbearing. Starters could include carpaccio of Yorkshire beef, smoked oxtail, beetroot, watercress, horseradish or Whitby crab and cucumber cannelloni, brown crab and pickled samphire. Mains could include a Holme Farm venison cutlet with crispy bone marrow, chicory tart tatin or line-caught wild sea bass with squash fondant. Enjoy Tandoori spiced fish or pink calves liver with red onion marmalade from the grill. Finish off with iced banoffee parfait, peanut butter truffles and vanilla shortbread. Or an assiette of ways with seasonal fruits. Cider comes from Ampleforth, beer for the batter from Daleside Brewery in Harrogate, crab from Whitby and chefs regularly forage within the hotel’s grounds for wild garlic and herbs, so expect new takes on Yorkshire finest. Wines are meticulously filed into regions and countries while a grand pink chandelier and white coving typify the upmarket vibes of the interior conversion. With 16 private banqueting rooms, this no cottage operation. Yet size is put in perspective by excellent service.
