A relaxed dining experience. Billy’s Bistro and Bar is a friendly place with delicious food designed for sharing platter or individual portion dining. Named after Billy Butterfly, a popular and cherished Ballarat local personality from the 1950’s, you are invited to relax at Billy’s while you enjoy a snack, meal or drink.
Billy’s Bistro and Bar opens daily from 7.00am – 9.30pm.
Start the day with breakfast; your choice of a continental or the full cooked breakfast, prepared by our breakfast chef.
Give in to that urge for a snack attack at any time of the day with your choice from the ‘Grazing and Sharing’ selection off the menu. Maybe just a bowl of hand-cut chips and aioli… whatever satisfies that hunger pang!
For a casual lunch or dinner, enjoy the full bistro and bar menu which features seasonal produce, prepared fresh by the chefs in our kitchen with ingredients from local growers and suppliers. Choosing what dish to order may present a pleasant challenge as you contemplate each tempting menu item. Will it be our in-house dry aged beef-of-the-day or locally grown slow-roasted pork belly, just two of your options?
From a comfortable seat at the bar or at your dining table, enjoy our selection of local wines, boutique and popular beers, ciders and a range of mixed drinks or cocktails.
A pleasant evening, with exceptional service. Unfortunately my steak was over cooked but still flavourful. I am glad I am Accor member as the prices of meals are too high. Not sure you are getting value for money. I would also like to see a larger selection of drinks e.g cocktails / mocktails etc

As always this Restaurant is excellent. I often find the menu has been changed too. The B’fast is excellent & you must try the Bircher as holds you together like nothing else does for the day. The Waitress we had for dinner was excellent. We also noticed that the Staff don’t seem to wear their name tags. When they do the writing in white is far too small. Ridiculous! How can Guests give a compliment when you don’t know who you are speaking too. There was also a couple of Waiters who just held their heads in the air or walked thru as if on a ‘mission’ & if you really wanted someone to see you one had to put their hand in the air (or trip them up with your leg) to get their attn. A Waitress should be ‘scourring’ the whole room. So my advice is, hold your head to table level then you will see if patrons require attn. It becomes so frustrating to me and annoying. But overall, it would be the best place to not only dine but to also stay as a House Guest. Take note of Bern as a good teacher!
We had a lovely evening. Atmosphere was relaxing and enjoyable. Although not a big menu we still thoroughly enjoyed the Mexican soup and the burger! Delicious. Staying at the Mecure overnight meant that we could enjoy our great tasting Hunter Valley wine and walk back to our room. Thanks for a lovely meal.Will definately recommend Billys Bistro.

Great food as always. Once I had finished no staff came near me to see if I wanted desert & in the end I had to leave as I had another engagement.

I think a few extra chicken and seafood options would be great on the menu. Service was great and all staff friendly and helpful.
