About Bacaro

Description brought to you by Manchester Confidential:

Passionate about Venetian small plates.

There is something about Salt House Bacaro that makes you want to spend all day and evening in there, talking with friends, laughing, whispering; draining your wallet on lots and lots of its food. And you won’t even care.

That’s not to say Salt House Bacaro is particularly expensive, but it is very addictive and temptation is everywhere. From Paddy Smith’s Red and Blue group, which already runs the hugely popular Salt House Tapas and Hanover Street Social, Bacaro is all about ciccheti, the Italian version of tapas: diminutive, and, as the saying (almost) goes, perfecto formed. The attention and passion is evident.

Spinach puree and pea shoots elevate goats cheese pearls into the heavens. Or try acorn-fed Iberico ham; Venetian, slow cooked duck ragout; a handful of pizzettes, and wonderful Stornoway black pudding with chicken livers in Marsala. Don’t miss the grilled king scallops in shells (£3.50 each), a perfect 10. Thirsty? Choose one of 10 different Camparis or a Bellini from a magnificent list.

"It is very clear that everyone involved is absolutely passionate about the food and how it is cooked and presented, along with obsessive interest in provenance." - Gordo

Gordo bloody loves the newest bit of Italy on Castle Street
17.5/20
As a North West food pundit and all round fat bastard, Gordo despairs sometimes of the current trend towards good, but middle-of-the-road dining that flows up from that there London, generally landing in Manchester first, then spreading over to Liverpool as a second destination. For the first time in ten years Fatty gave a dish 10/10 outside a Michelin-starred restaurant. Liverpool can get the needle over this “Manchester first, Liverpool second” stuff. Alternatively it can thank its lucky stars. And, because of three scallops, it should indeed do just that. Like the Galapagos Islands, Liverpool gets more time to be quirky and interesting in its restaurant offerings due its geography, as it does take longer for stuff to arrive from outside. This means that the homegrown varieties can be a good deal more interesting than the stuff being manufactured by the soulless marketing men elsewhere. Take them three scallops. Gordo had time to kill after spending a couple of hours chewing the Migas with the Spanish food botherer Peter Kinsella over at Lunya, who mentioned that a new restaurant had just opened next to another of Gordo’s favourites, San Carlo. So, Gordo found himself staring at these three scallops, served on the half shell, salivating furiously. The size was impressive. The fact that the chef had kept the orange roe on was impressive. The aroma floating off them was very impressive. The timing of the cooking, to get them slightly charred on the outside and translucent in the middle was really, really impressive. Then they blew Gordo’s mind. Cooked with butter, parsley, garlic and a touch (he thinks) of good white wine, these freshest, sweetest of scallops, grabbed Gordo, slung him back and snogged him with an abandon that left him breathless. For the first time in ten years Fatty gave a dish 10/10 outside a Michelin-starred restaurant. Matt Walsh is the head chef here and cooked those scallops. God help him if doesn’t replicate it next time Gordo is in. The place is Bacaro, the new kid on the block up on Castle Street from the Salt House people. It’s a bit normal from the outside, but walk in and you get the buzz, instantly. It’s all a bit Hemmingway. Don’t ask. It just is. There is a bar, punted at us as a Campari bar. All a bit distressed, but cool and not over-engineered. Flowers and leather banquettes add atmosphere to the room, whilst over in the far corner the kitchen is on view, adding warmth and great smells. Service is assured, cheeky and professional. Gordo fell madly in love with his waitress, Laura. Apart from being a stunner, she knew what she was doing. Then, being a fickle old bastard, those scallops turned his weak head. Beforehand, charcuterie - one a board of fennel salami (£5.95), then hand-carved shoulder, salchichon and chorizo (£12.95) and D.O.P. Bellota ham (£8.50-half portion) - had stunned Gordo into silence. The latter two were from acorn-fed pigs; they were served immaculately and sang with flavour. There was Stornaway black pudding on the menu; this should be Bury, to be fair, so Gordo snubbed it. The portions are all small, and priced that way, in the new "Cicchetti" style that has become popular, think grazing and sharing. Or just be one greedy mother like Gordo. Mussels with sliced fennel, Pernod, chilli, cream and bacon lardons (£5.50) were tip-top whilst the chicken saltimbocca with Parma ham and sage (£5.50) suffered a little from being chicken and not veal. It did have a cheeky bit of pan-fried apples with honey that was a nice ‘ouchy’ touch. The pudding was an outstanding buttermilk panna cotta, with amaretto cherries (£4.95) served with nutty biscotti, brilliant for scooping. The wine list is a charmer. Gordo started off not wanting alcohol but finished up necking a bottle of Tedeschi Amarone della Valpolicella from Veneto in Italy (£49.95). The less ridiculously extravagant can do very well indeed at the sub £20 level with a bottle of Aires Andinos (£18.95), a tricky little Malbec from Mendoza, in Argentina. The point about this absolute gem of a restaurant from a gem of small group, including Salt House Tapas, is that across the North West region, quite frankly, we don’t find places like this; it is very clear that everyone involved is absolutely passionate about the food and how it is cooked and presented, along with obsessive interest in provenance. Gordo’s hat goes off to these fellers. Bloody love it. Bacaro is a Gordo Go.

I booked this table on behalf of my dad, for his & my mums anniversary! I made a comment when booking on line as it was a special occasion could they be looked after! Both my dad & mum had a 'beautiful' meal & were also presented with a glass of complementary fizz to celebrate. They both said how welcomed they felt, all staff were very attentive & the food was delicious! Thank you so much for making it that extra special for them!

We booked a lunchtime slot for our anniversary. We were sat quickly and given our pick of tables. Our drinks were quick and it was nice to be offered a flavourful draught beer different to the ones usually offered by tapas bars. The food we ordered was bought quickly and was really tasty! Ordering from the lunchtime set menu meant we got a bit better value for money than the main menu offered; an option further improved by the range of vege dishes offered for my wife. Would defo recommend and return! A great way to spend a couple of hours and leave with a full belly!

I booked this restaurant on the basis of an offer I had seen on Sugarvine, namely £12.50 for any 3 courses.I will say straight away I have no issue with the food here: everything my friends and I ordered was delicious. The reason I have given this restaurant a poor rating for service is because I booked this restaurant specifically because of the offer I found on Sugarvine.I rang to book, quoted Sugarvine as requested and was assured, when I asked, that yes, the offer was everyday until 5. So I have to wonder why on arrival we were given the lunch menu, which had a more limited choice, and were told it was 3 dishes from that menu for £13.95. I queried this with a member of staff, telling him I had been told when booking the Sugarvine offer was still on. He went away, came back, and said no, it was just the lunch menu deal. At this point I showed him the screenshot showing the offer. He laughed and told me I hadn't noticed the offer was for their other restaurant, Salthouse Tapas. At this point I gave up, even though it clearly says Salthouse Bacaro. So we stayed and 3 of us had the lunch menu, my other friend ordering from the main menu and paying full price. It was all lovely. However, the wine was not very well chilled and while we appreciate in a small plates restaurant the dishes come out as and when cooked, commonsense would suggest that a cold dish that doesn't need cooking (hummus and bread)ought to be brought out first, rather than right at the end when all the hot food has been eaten. To sum up, we enjoyed what we had, and had we been allowed the offer we thought we were getting we would have stayed longer, ordered more wine and had desserts, coffees and liqueurs, therefore spending more than we did on the offer we had to settle for. We decided they didn't deserve anymore of our custom and went on elsewhere. By the way, I checked the morning after. The Sugarvine offer is still there...
